Today we are designing new sweet preparations to satisfy the demand by public. Due to constant and stable preparations people are fed up and thus need new flavor and form.
So, modifications are being carried among the existing sweet dishes. Instead of this, it is wise to bring into practice the age old classical preparations.
Sudhapara is one such classical sweet preparation explained in Bhojana kutoohala text. Even though such a preparation is not found in sweet market but similar preparations can be found.
Method of preparation:
Maida or dried coconut powder is taken and sieved.
To this equal amount of sugar candy and ghee is added and mixed thoroughly.
This is rolled into bolus of Amla (goose berry) size.
As per classical textbooks this is kept in a silver tray and closed.
This should be placed in sunshine for 1-2 hours.
When its outer surface just breaks, it looks like blossoms of jasmine flower. This is taken away from sunshine and served instantly.
