Ingredients

Ingredients of Date milkshake:
Seedless dates – 50 grams.
milk – 100 ml
Cardamom
Cashew nuts – 25 grams
coconut milk – 500 ml
dry nuts [if necessary].

Chop dates it into small pieces and soak it in 100 ml of milk and leave it aside for 15 to 20 minutes.
Take two dates and a few cashew nuts, chop them into small pieces and fry them in a pan with ghee until they become crisp, and keep it for cooling.

Prepare a semi thick paste of the dates soaked in milk using a mixer and keep it ready for next process.
Take half piece of the coconut and prepare the coconut milk from it and keep it aside.

Boil half a liter of thick milk and slowly add the above-prepared thick paste of the khajur (dates) by mixing it with a flat shaped wooden ladle. Allow the dates paste to get cooked for 5 to 10 minutes, by keeping the flame simmered. Care is taken to avoid charring of the paste in the pan by occasional stirring with the wooden ladle.

When the cooked Ksheera Karjurika attains a slightly thicker consistency, add 10 to 15 ml of cow’s ghee, the roasted kharjūra and nuts pieces, and the coconut milk prepared, and stir it for a few seconds. And then switch off the stove. The Date milkshake is now ready to be served hot.
